The Butcher opened its doors on Grafton Street in 2012 with one simple mission: to serve the very best Irish beef, prepared with skill and respect for the craft. Every steak on our menu is dry-aged for a minimum of 28 days in our purpose-built on-site ageing room.
We work directly with a small number of trusted Irish farms — all within 150 km of Dublin — choosing only cattle that have been slow-reared on grass. The result is beef of exceptional depth, tenderness and flavour.
